HEC cooking

In cooking with lock down my task is to write and make a food and I have done stuffed potatoes.

Ingredients:

6 Large Potatoes
6 Slices of Bacon diced
Half a Onion diced
6 Mushrooms sliced
Cup of grated Cheese
50g Butter softened
Half cup Sour Cream
Extra Cheese grated

Method:

Stab your potatoes all over with a fork, place in the microwve for 10 - 12 minutes until cooked though.
Cook your bacon, mushrooms and onions while potatoes are cooking, se aside.
Once the potatoes are cooked slice the tops of and scoup out the insides into a large bowl, (Be careful the potatoes will be hot).
Add the cheese, butterand sourcream to the potatoes and mush them together.
Add the coooked bacon mixture and stir.
Spoon the mixture back into the potato skins and top with extra cheese.
Bake for 12 - 15 minutes or until the cheese is golden on top.

The texture was smoth with crispy bit of bacon and I did not add mushrooms because I don't like them.

It is my Mom recipe, my Granny used to make them for my Mom when she was a kid.

The bit that was the hard's was geting the cooked potato out of the skin because the skin was easy to break.
